the problem I see is that every meal in KY MUST be prepared in bacon grease or with bits of bacon or topped with bacon or over bacon or wrapped in bacon--see a pattern? and i'm not talking about pancetta or proscuitto.

as a born and bred southern boy...it makes me laugh to here about Southern Fried Chicken in the North. It's alot like the dumbasses down here selling "authentic philly cheese steaks"...wtf ever...

Then you probably know that there is a line you cross, somewhere above Kentucky or Ohio, and above this line you cannot find grits anywhere and if you ask for them you get funny looks. Below the line they're everywhere.

Well Steve,
There have been plenty of good suggestions on this thread.
I'll just put in my two pennies worth...

Being as Saratoga is near the Adirondacks...I think "mountain oysters" should be on the menu. Serve 'em on a kieser roll with a "high life", slaw on the side.
Saratoga memories will be made.

Q: "Hey, how did you do at Saratoga?"
A: "You've gotta have oysters if ya think you'll win there."
