I should clarify this as the 70# is a number that doesn't accurately define what a horse can lose just running a race, but rather total weight loss in a day.. A 10# weight loss from running a race isn't necessarily 'stunningly low'..

Without stepping on a scale I have no idea how someone can determine if a horse lost 10 or 20 lbs in a race. I have heard a wide variety of numbers but remember that most horses lose a lot of water weight before they even get to the paddock if they are on Lasix.

Don't you just pick them up, like my puppy and then subtract your own weight when you started? It's easy.
