Default For 2023, The Leon Blusiewicz 'Best You Ever Ate' Crab Cakes

Blue made his annual Preakness appearance and didn't disappoint! Here's the Crab Cake Recipe ~ an ATR tradition ~ with the addition of Worcestershire Sauce, which Leon says makes them more like the ones Obrycki's used to make. (And note that Kellogg's now owns Keebler's, but they're still Club crackers in the green box).

The Leon Blusiewicz 'Best You Ever Ate' Crab Cake

1# premium jumbo lump Maryland crab meat (don't compromise on quality of crab),
1T Gulden's Brown Mustard,
3T Hellman's Mayo,
1T Worcestershire Sauce,
1 beaten egg, Montreal Steak Spice (to taste, @ 3T),
1 sleeve (minus 4 crackers) Keebler/Kellogg's Club House Crackers (crumbled by hand).

Pick crab meat to remove any shell/cartilage. Season to taste with Montreal-style Steak Spice. Add cracker crumbs and gently mix by hand. Blend mustard, mayo and Worcestershire, fold in beaten egg. Add to crab and gently mix with crab, moistening evenly. Form crab cakes, packing lightly. Refrigerate firm. Broil till evenly browned; Or deep fry in Crisco; Or pan fry in butter. Makes 4-6.
