I agree with Andy's take on speed horses, just let them run. It really rings true in turf races where jockeys will be on the lead and let other horses come to them (by that time is usually too late), instead of opening up and discouraging the horses behind.

Aren't trainers somewhat like coaches? Shouldn't you try to play to your strengths rather than limit your advantages. Don't inhibit the animal if he has that natural speed. I love the point about how letting out another notch when horses come up to the frontrunner just crushes the will of the pursuers.
