FG does have turf racing, and they've had decent sized fields so far (perhaps due to the absence of turf at the CD Fall Meet), but it's no contest on dirt.
Expecting a meet chock full of $5k Claimers and LaBred fare.

More importantly, what do the average winners of those 4 types of races pay?

Great news....you don't have to play a track if you don't like their races, but my guess is both tracks have their fans. For those people that like turf racing, Fair Grounds offers some opportunities.
