The acid in the lemon juice cooks the fish
Some put the fish in with the lemon juice & leave it over night but i find this makes the fish too lemoney, The main fish i have found you can use with this dish is, Snapper ,John Dory ,Sword Fish .
Its a great dish that you can experiment with time & time again some work
