Now we need DRF to cover those races so we can see Beyers and know who to bet... but they say a lot of money is in those Hong Kong pools so I'd love to take a shot.

There is a ton of money in those pools, but you will never (and I mean never) find pools change faster in the last 30 seconds than in HK. The commentator literally watches the tote board and updates you verbally in the last few seconds so you know what's happening because millions come pouring in in the last few ticks by tech-aided wagerers.

But do they change in the 30 seconds after the break?

No.

Anybody know what the favorite hit percentage is there - is it around 33% like the US or higher?

In other words - are the pools just filling fast at the end due to the tech-aided wagers, or are those guys that sharp that the horses they bet down to favorite status are actually winning more often than we see here?
